Why I make cinnamon honey syrup
Growing up in Colorado, fall/winter/spring felt like a solid 8 months, winter being the worst. Many would say I’m exaggerating, it’s all real to me. I know Colorado winters really weren’t all that terrible in comparison to other states, but I dreaded the cold, brown, and uninviting landscape. I was starting to spiral back into my winter blues for a moment just talking about it.
About the syrup. This syrup, as silly as it sounds, really made me happy during those cold months and was always something I could look forward to enjoying. Curled up on the couch with a blanket, some guilty pleasure “reality” show, and my cinnamon honey syrup mixed into my latte. Lovely.
Since I’ve moved away from the dreary weather, I can still sip on some of my cozy drinks. There is a rainy season here in the Philippines and it’s wonderful where I live. Sure the humidity is out of control, but the heavy downpour, booming thunderous clouds, and spark-lit skies make for an unreal show put on by mother nature. I just stand at my window and watch it all with a tea in hand and of course, this homemade syrup to go along with it.

You’ll only need very minimal equipment to create cinnamon honey syrup.
Ingredients
- ½ cup water
- 1 cup honey
- ¼ tsp cinnamon (powdered)

Very minimal ingredients typically already found in your kitchen cupboards. You won’t have to brave the cold to make this simple recipe.
Instructions


Step 1
Combine ½ cup water, 1 cup honey, and ¼ tsp cinnamon in a medium saucepan over medium-low heat, making sure that the mixture doesn’t come to a boil. Reaching a gentle simmer is okay, but immediately turn off the heat.


Step 2
Stir until the honey is dissolved and well incorporated into the water. Allow to cool.

Step 3
Pour directly into a clean jar with lid for later use or straight into glasses for immediate use.
Notes
This recipe creates about 12 oz of cinnamon honey syrup.
To thicken the syrup, add more honey to the already dissolved honey water mixture. Adjust for your desired consistency.
The heat should remain on medium-low when dissolving the honey. Increasing the temperature setting could degrade any of the health benefits received from the honey.

Cinnamon honey syrup can be served as a sweetener in some of your favorite beverages: tea, coffee, or cocktails.
How to Store
Funnel the cooled syrup into an airtight container and store in the fridge for up to 1 month.

Will any ol’ honey do?
Honey do. Haha sorry. Yes. Whatever honey you have in your cupboards will work perfectly for this recipe.
The consistency is off, what should I do to fix it?
Not to worry. Just keep the heat on medium-low and add either a little bit more water (if syrup is too thick) or more honey (if syrup is too thin) stirring until the desired consistency is reached.
Can I boil the syrup to evaporate the water for a thicker consistency?
Yes. If you don’t want to add more honey to thicken it up, you can bring it to a low simmer to evaporate the water. You may lose the health benefits by doing so. If the health benefits of ingesting honey are important to you, I would advise against raising the heat temperature beyond medium-low, and using more honey instead.
